Tallman , I haven't had any decent Fried Green Tomatoes since my Mom passed she was fro Wv . I haven't got the recipe dialed in yet . But corn meal is one of the ingredients , right ? Maybe I'm doing it right but it was just Mom's cooking ! Do you use butter milk also ? This Inquiry Mind needs to know .
Well, now that fall is arriving - with it's share of a bountiful harvest of Food, Allergens and Kids heading back to school...
Thought I'd share this:
There's no "secret" recipe or any special seasonings - but every year local stores will put their spice rack items on sale and we pick them up - we use many of these for mom as homeopathic remedies to help augment her health and immune system against other ailments that Medicine and Tylenol can't.
Turmeric, Cumin, Mustard, Tarragon, Coriander, Basil, Garlic, Onion, Parsley, Oregano, Marjoram, Rosemary, Celery Seed, Fennel, Caraway seed, Sage, Curry Powder, Paprika, Thyme - Sea Salt and Peppermill grinds of Green, Red and Black peppers.
So with the above in mind, and from my rather embarrassing intro from earlier ...
Well, maybe not so embarrassing - more like - physical resemblance...I do cook and bake from mom so that statement from earlier is applicable - if not - inevitable.
You can substitute your own "supervisors and taste testers" as you see fit...
Forgot to mention, and this may provide some relief to others for this was provided as an alternative to things like Omnipreazole (Prilosec OTC) to help.
Mom has had Reflux disease for a long time - and Tomatoes was one of her favorites. But because of their acidity - she's had to stay away from them.
But in discussions with the doctors and with other homeopathic and culinary people, we have found it's safe to add in 1 - PALM (about 2tbls - Tablespoons) of Baking Soda to (Sodium BiCarbonate) to offset the acidity of the vegetables like Tomatoes and Peppers - but do this at the start, for as the soda mixes in with say, the stewed tomatoes, it can form a foamy reaction so use care and apply the soda when you start to stir in the ingredients from the cans. The reaction will occur and you'll have time to disspate the foam and not overflow as you stir in the ingredients. Once the reaction is done, the stock returns to normal and the results are a lot less acidity so people with heartburn or acid reflux can easily digest this meal. The Soda can also provide some relief to hotter spices if you overmix "hot" peppers or similar.
Milk can also help provide some relief too - for it will help counteract the hotter burning effects of the stronger spices - use as needed. 1 Cup is really all you'll need.
Sour Cream, again like milk, but can thicken the broth and smooth out and help blend flavors.
