So I have a 2995DX on the way . . . . which amp?

Dead key I believe 5-50 watts.

Consensus of the locals is that a tube amp tolerates more and gives a cleaner signal in terms of bleed over and interference problems - suggestions for a tube amp for the RCI 2995DX?

From what I read so far, it should not be a "sweep tube" type - so no RM Italy I guess.

If possible, also suggest how I would modify or buy modified for 11 meters - I noticed Ameritron sells tube amps for 10M but need to know how to get it modified or modify myself - someone posted something about a green wire?

Recommendations for online store to buy from helpful as well.

The green wire gets clipped or you unsolder it. Legit sellers will remove it for you if you have a ham ticket. The 811A can be had under 1K. Read up on these units on Eham... tons of reviews. From what I understand, the 80B's are built a lot "heftier" if you will. You can also run the 572B's in the 811A, but the 80B uses a single 3-500Z tube, and those are the real deal.

You will have to figure out how to key it. Some guys do footswitches, some do RF sensor. PM Mad Scientist, and I'm sure he can give you some ideas. He's been there, done that, and got the t-shirt. :)

Sounds like you'll have quite a setup. What do you have in the air?

A little off topic, but does the 2995DX come with the "e-chip" in the box or do you have to purchase it separately?

It's supposed to be in the bag that holds the microphone. There have been reports that Copper will remove it if you order the radio without them "tuning" it.
