I actually recently sold my VX-8R and replaced it with a TH-D72.
They are both great radios, but I prefer the TH-D72. Some of my thoughts:

You could also use K5EHX Amateur Radio Repeater Mapping to browse a map of repeaters for where you're going, then download the repeaters and program your radio using software.

They will see each other just fine! Having a digipeater around will just increase your range and chance of an igate picking up your packets. You could use any frequency, but 144.39 is the standard in the US.
