why it seem that a 40-10 EFHW 56.1 is a tad harder to tune compared to the same antenna except with a 49.1 transformer I can tune it in under 5 minutes .1.3 SWR on 40,20,15 meters the 56.1 I'm still trying to fine-tune the best I get is 40,20 meters swr 1.5
 

The simple answer is because your input impedance on those 3 bands is closer to 2450Ω
But you discovered why SWR only tells you what ratio you are reflecting, and not what the actual impedance is; for that, buy a NanoVNA and use the Smith Chart function to determine impedance and resonance.

If you want to raise your impedance because you like the 56:1 UnUn better, then you will likely have to raise your antenna (so your feed point is 1/2 wave above ground), and shorten your counterpoise.
