Does anyone know if I can paint the coils on a Wilson 5000 trucker antennas without hurting my receive or output?

Go right ahead. It doesn't change a thing, and I sprayed many over the years.
As above. The coils themselves don't really transmit or receive anything but merely match the impedance of the antenna to 50 Ohms so your CB can use it.
