I'm assuming you're set on a tube amp as opposed to transistors? Is that the case? Although a mobile amp by design, the Texas Star DX-500V would be a nice choice. It's class-AB1 and does well on SSB and AM.
... and this is exactly why I won't give this mic the time of day to test. I was really dissappointed to learn this new mic was going to use this same POS casing. I love the audio of the 2018, but will not use the mic due to the sub-par casing.
That 300P is a fine amp if not overdriven. Set DK to 1.5-2.0 watts and let it run. A single final radio is best for this amp, however I have used dual-mosfet radios with this too with success. If you could keep the radio PEP @ 25-watts or less, you'll be fine.
I actually have one of these I'm looking to sell. It has the adjustment dial on the front-top area right there, so you can adjust the modulation without flipping it over. It's brand new and only used for a few minutes. It didn't match well with my voice and my 2985-DX.

Looks like you're interested in a straight 40-channel AM radio with SSB. That being the case, I'd like to recommend the Galaxy DX-979 instead. It's smaller and will perform a bit better. It has the Starlit display, which makes it nice at night.

Be prepared for a nice compact size, fully featured radio that has the noisiest receive I've ever experience, especially in a mobile installation. I am hoping this newer model takes care of that, but I'm fearful the only thing that's changed is the RFX add-on.
Out of the box, that stock 520-XL is going to be too hot to hit that amp. By default, the RM Italy amps only like really low deadkeys, like 1.5-2.0 watts. That 520-XL, I expect is doing 3 or 4 out the box.
