Today, I dropped off my two ICOM radios, the 7300 and the 746, to recalibrate the S meter and to fine-tune the receive and power meters. I asked the technician if he could check the ALC on the 7300. He responded that nobody uses ALC anymore. Did I miss something over the last five years, or is this a Florida thing

Modern radios such as the Icom 7300 and the Anytones and many others are SDR based radios. They look and function as a radio, but in reality they are a computer and all the parameters are set through software. Those parameters may or may not be adjustable by one or more "hidden" menus. There is little or nothing in there to adjust!
So your tech is correct that there is no more "ALC" in the old-school way. Instead, there is a value somewhere in a menu that he may or may not be able to access that does the same thing as the old analog ALC would have.
