Is this a radio that can be fairly simply converted to cover 11m and if so what is its converted range and finally is it worth bothering.

Yes . 1 wire. It will go a little below 1 up to 28mhz

You will however need a ham ticket and a small army of antennas to use all those frequencies LOL!
Is it worth having / acquiring and what would a fair price be..... just in general of course as I can't tell from ebay as they're all over the map.
That sounds fairly complex. I believe I might just be able to manage that!
(Seriously didn't think it would be THAT simple) just one issue I didn't forsee.... this is SSB only isn't it, no AM?

Keep in mind these are 35+ years old and most likely need a full recapping.
No AM. But one of the best SSB radios. I do have a link to a small board you can install to get AM. But I wouldn't. If you want AM get an AM rig.
