This is how i have adjusted my unit for so many years, So is this now not correct?
The difference here is that they tell you WHICH direction to crack the knob away from the peak. Clearly it has been working for you, so I wouldn't try to fix something that's not broken.

My beef is with the advice to "back off" that control without any guidance which way. To the left? To the right?

The instructions for the Skipper are correct as far as I know.

But I cheat. I use a 'scope to observe peaks.
