You can get fuses from Mouser. The fusehold caps are another problem. They are not universal. And they are not sold separately in my experience. You need to buy the whole fuseholder. just one problem, it would have to be the same as the one in the amplifier's back panel. There are two dominant brands. Buss and Littlefuse. The caps for one brand won't fit the other.
More than once we have found the only cure for missing fuseholder caps was to replace the entire fuseholder. I suppose if was $mart I would get 3D scans of every popular fusholder cap and make the things. The sales volume would probably suck, but the customer would be really happy he didn't have to tear out fuseholders and replace them. But it would probably take decades to recover the cost of tooling.
If there's an Ameritron expert out there, you could get advice on what fuseholder to buy so that the cap is compatible with your capless fuseholders.
I would also recommend a critical and detailed look at the inside of the amplifier, especially around the rear panel where the line cord, fuseholders and startup relay are found. Any scorch marks or signs of excessive heat might suggest the caps are missing for a reason. Signs of a poofed filter capacitor would explain why the caps were pulled off. Just doesn't explain why they weren't put back. Unless it was a desire to enforce a "can't test" claim in a sales pitch.
